Cinnamon is a spice found inside the bark of several trees of the genus Kinnamon.. The farmer strikes the branch evenly with a hammer, to relax the inner cortex, which is then detached into cylinders. Only 0,5 mm of inner bark is used, while its outer woody part is discarded. The treated bark will dry completely in four to six hours, and as soon as it dries it is cut into pieces 5 to 10 cm long.
